UGO Pizzeria started with a passion rooted in Roman tradition.
Inspired by the craft of pizza al taglio — the iconic rectangular pizza served by the slice on the streets of Rome — our concept celebrates the artistry, patience, and authenticity behind true Italian baking.
At the heart of UGO is sourdough — not a trend, but a ritual. A slow fermentation process that creates deeper flavour, better texture, and a lighter, more digestible crust. This dedication to tradition is what defines our pizza: airy, crispy, and perfectly balanced.
When the idea for UGO was brought to Montreal, the mission was clear: introduce genuine Roman-style pizza made with proper sourdough techniques. Every tray reflects that philosophy — honouring heritage while embracing a modern dining experience.
